Mix Veg Festive Special


There are many kinds of mix veg recipes. But this one is a South Indian traditional festive special. Very simple, easy and quick one.

INGREDIENTS:

Cauliflower: 11/2 Cup
Potato: 1Cup
Brinjal: 1Cup
Red Pumpkin: 1Cup
Yam: 1/2 Cup
Colacasia (Arbi): 1/2 Cup
Raw Banana: 1/2 Cup
Sweet Potato: 1 Cup
Drumstick: 2
Green Chilies: 4-5
Beans/Broad Beans: 1/4 Cup
Tomatoes: 3 chopped
Mustard Seeds: 1tsp
Cumin (Jeera): 1/2tsp
Ginger Chopped: 1tbsp
Turmeric Powder: 1/4tsp
Red Chili Powder: 1tsp
Dhaniya Powder: 1tsp
Cumin (Jeera) Powder: 1/2tsp
Spring Onions: one stem Optional
Curry Leaves
Coriander Leaves
Oil: 3-4tbsp
Salt to taste
METHOD:
  1. Clean and cut all the vegetables in pieces.
  2. Take a pan and heat 3-4tbsp of oil.
  3. Add mustard seeds, Jeera, curry leaves and green chilies and saute them well.
  4. Now, add drumstick pieces and saute for a min or two.
  5. Now, add all the vegetables one by one.
  6. Also, add chopped tomatoes. 
  7. Add turmeric powder, salt, red chili powder and chopped ginger.
  8. Toss and mix vegetables well and keep the lid. Cook the vegetables on medium flame for 10mins
  9. Once vegetables are half cooked, then add Coriander powder and Jeera powder. Mix well.
  10. Keep the lid and cook on medium flame for 10 more mins. Meanwhile, check whether the vegs are cooked or not. Also, check and add salt and red chili powder if needed.
  11. Add spring onions, coriander leaves and mix well. Cook it on low flame for 5 mins and turn off the stove.
  12. Serve hot with rice or roti.

EGG MASALA WITH POTATO







INGREDIENTS:

Eggs: 4
Green chilies: 2
Curry leaves
Tomato: 1
Onions: 3
Ginger Garlic Paste: 2tsp
Coriander Seeds: 2tbsp
Cinnamon: 1inch
Cloves: 5-8
Potatoes: 2 Big
Turmeric Powder
Red chili Powder
Salt
Everest Chicken Masala
Oil
Coriander Leaves.

METHOD:
  1. Boil Eggs and Potatoes and peel off.
  2. Make fine paste of 2 Onions, Coriander Seeds, Cloves and Cinnamon.
  3. Take a pan and heat oil. Now, fry eggs with turmeric powder for few mins and keep aside
  4. Now, fry green chilies and curry leaves.
  5. Add finely chopped Onion and sauté them till soft.
  6. Add turmeric powder, red chili powder and salt.
  7. Now, add Onion paste and ginger garlic paste and sauté the mixture till light brown.
  8. Add, finely chopped tomatoes and cook till the pieces are soften.
  9. Add Chicken masala (Optional)
  10. Now, add Potatoes and fry for some time.
  11. Add boiled eggs to the curry.
  12. Finally add some water and cook some more time until the gravy gets thick.
  13. Garnish with coriander leaves and serve hot with roti or rice.

POTATO FRY

INGREDIENTS:
Boiled Potatoes: 4
Onions: 2
Mustard Seeds: 1tsp
Urad dal: 2tsp
Chana dal: 2tsp
Red Chilis: 2
Green Chilis: 2
Curry Leaves
Turmeric Powder
Red chili Powder
Salt
Oil

METHOD:
  1. Heat 2tbsp of oil in a pan and fry mustard seeds, urad dal, chana dal, green chilis and red chilis, curry leaves.
  2. Now fry sliced onions, turmeric powder and salt and fry till the onions are soften.
  3. Now, add red chili powder and mix well.
  4. Now, add boiled potatoes and mix well and cook few mins.
  5. Garnish with coriander leaves and serve hot with rice or roti.

POTALS (PARAWAL) WITH AALU

INGREDIENTS:
Potals /Parawal: 1/4kg
Potatoes: 1/4kg
Mustard Seeds: 1tsp
Urad dal: 1tsp
Curry Leaves
Turmeric Powder
Red Chili Powder
Salt
Oil

METHOD:
  1. Heat 2tbsp of oil in a pan, fry mustard seeds, urad dal, curry leaves and green chilis.
  2. Now, add chopped (cut them into slices) potals and raw potato pieces and mix well.
  3. Now, add turmeric powder and salt. And put lid (add some water on lid to reduce cooking time).
  4. Cook until potals and potatoes are well cooked. (If needed, add some oil too) and finally add, red chili powder and cook for few mins.
  5. Finally garnish with coriander leaves and serve hot with roti or rice.

CHANA WITH AALU

INGREDIENTS:
Kabuli Chana: 2cups
Potato:  3
Green Chilis: 2
Tomatoes: 1
Mustard Seeds: 1/2tsp
Urad dal:1/2tsp
Jeera
Curry Leaves
Turmeric Powder
Red chili Powder
Salt
Dhaniya Powder
Chole Masala
Oil
METHOD:
  1. Soak Chana over night or max. 8hrs.
  2. Boil soaked chana with Salt and 1/2tsp of turmeric powder. Also boil Potato in cooker for 2-3 whistles.
  3. Now, Heat oil in a pan and fry mustard seeds, urad dal and jeera. Also add Green Chilis, curry leaves. Now add Boiled chana (keep aside 1/4cup boiled chana to smash) and fry till the chana is well fried.
  4. Now, add 1tsp of Onion Paste, ginger garlic paste and fry for some time. 
  5. Now, add turmeric powder, Red chili Powder and salt. and mix well
  6. Now, add Potatoes and smashed chana and Tomato pieces fry for few mins.
  7. Now, add Everest Chole Masala , Garam Masala and mix well
  8. Now, add some water and cook until the gravy is thickened.
  9. Finally, garnish with Coriander leaves and serve hot.


TIPS:  Here, Smashed chana is used only to make the gravy thick. If chana, potatoes are well fried the taste will be good.  Serve hot with roti or rice But, best with rotis.

AALU CHAT

INGREDIENTS:

Boiled Potato
Boiled Mutter
Green chilies
Onion pieces
Chat Masala
Salt

METHOD:
  1. Mix all ingredients

AALU PARATHA

INGREDIENTS:
Boiled aalu: 3big
Green Chilis: 2
Aata
Salt
Red chili Powder
Coriander Leaves
Oil or Ghee or Butter

METHOD:
  1. Make the dough with aata and keep aside.
  2. Smash the boiled aalu and add chopped green chilies and salt.
  3. Heat oil and add red chili powder immediately add smashed aalu and fry for some time.
  4. Now, take small amount of aata dough and slightly press with roti stick and put small amount of aalu mix and fold it to cover the stuff.
  5. Now, by using aata flour make the roti as usual. Don't press it so thin.
  6. Now, heat tawa and cook roti on it using oil or ghee or butter.

CAULIFLOWER POTATO | క్యాలీఫ్లవర్ బంగాళాదుంప


Cauliflower Potato క్యాలీఫ్లవర్ బంగాళాదుంప - is a very simple and delicious recipe which can be prepared on regular basis. This recipe is easy to cook with minimal ingredients in less time.

This will be a good combination to serve with roti / chapathi or as a side dish with Rice. 😋

INGREDIENTS:

Cauliflower: 1 Piece (Cut into medium florets)
Potatoes: 3 ( cut into pieces)
Green chillies:3
Mustard Seeds: 1tsp
Urad Dal: 1tsp
Cumin Seeds (Jeera): 1/4tsp
Curry Leaves
Oil: 2tbsp
Red chili powder
Turmeric Powder: 1/4tsp
Salt
Green Peas: 1/2 - 1cup
Ginger garlic paste / Ginger Chopped: 1/2tsp (optional)

METHOD:

1. Take a pan and add water, salt. Bring the water to boil.



2. Cut the cauliflower to small florets and make slits on floret stems like shown in the picture.


3. Add cleaned florets into water and boil them for 2-3 minutes on medium flame. Drain cauliflower florets and keep aside.




3. Now, take a pan and heat 2tbsp of oil. Add mustard seeds, urad dal, cumin seeds, green Chilis and curry leaves and saute them well.



4. Now, add Cauliflower florets 


5. Add potato pieces. I cut a potato into 8-12 pieces. Based on the size of the potato you can cut into 4 or 8 or 12 pieces. Choice is yours.


6. Add salt & Turmeric powder.


7. Add green peas. Here, I used frozen green peas. If you are using fresh peas fry them first before adding cauliflower. Also, if you want you can add more peas as per the interest.


8. Add chopped ginger or ginger garlic paste. This is optional. You can skip if you don't want to add ginger.


9. Put the lid and cook it on low-medium flame until potato pieces are well cooked. And, mix occasionally to avoid burning.



10. Once cauliflower and potatoes are cooked, add red chili powder and mix well.  Cook it for 2-3 more minutes until chili powder blends well to the pieces.



11. Garnish with coriander leaves and serve hot with rice or roti.

EGG WITH POTATO

Eggs: 4

Curry leaves
Tomato: 1
Onion Paste: 2tsp
Ginger Garlic Paste: 2tsp
Potatoes: 2 Big
Turmeric Powder
Red chili Powder
Salt
Everest Chicken Masala
Oil
Coriander Leaves.

METHOD:
  1. Boil Eggs and Potatoes and peel off.
  2. Take a pan and heat oil. Now, fry eggs with turmeric powder for few mins and keep aside
  3. Now, fry green Chilis and curry leaves.
  4. Now, add Potatoes and fry 2mins in oil.
  5. Now add, salt, Onion Paste, Ginger garlic Paste. Fry until the paste becomes little brown.
  6. Now add, tomato (grated) or chopped and cook until the tomato gets cooked.
  7. Now add, 1tsp of Chicken Masala and cook for some time.
  8. Finally add some water and cook some more time until the gravy gets thick.
  9. Garnish with coriander leaves.
