Coriander Chicken | కొత్తిమీర చికెన్


Coriander Chicken - A simple and fragrant spicy coriander chicken or kothimeera chicken will definitely rejuvenate your tastebuds. 😍

Chicken: 500gms (Cleaned and added turmeric & salt)
Onions: 1Cup (sliced)
Green Chilis: 2-3
Bay Leaf: 1
Cinnamon: 1/2inch piece
Green Cardamom: 1
Black Cardamom: 1
Cumin Seeds: 1/4tsp
Chicken Masala: 1tsp
Ghee: 2tsp
Oil: 1tbsp
Turmeric Powder: 1/4tsp
Salt to taste

Coriander Chili Paste:

Cashew Nuts: 1/2cup
Green Chilis: 15-20
Ginger: 1 inch piece
Garlic: 20-25
Coriander Leaves: 2cups chopped
Curd: 1/4cup

METHOD:

1. In a grinding jar add Cashew nuts, green chilis, ginger and garlic. Grind coarsely.




2. Now, add chopped coriander leaves and curd.

You can also grind all masala ingredients at once to make the paste. But, if you grind all the ingredients at once, the paste won't be that smooth or you may need more time to make it smooth. So, I suggest you, first grind the hard ingredients and then adding coriander leaves, curd and some water.


3. Add a little water if needed and grind it to a smooth paste.


4. Take 500gm of cleaned chicken. Add 1/4tsp of turmeric powder and salt.


5. Add coriander chili paste to chicken and marinate it for at least 30 minutes.



6. Take a kadai and heat 2tsp of ghee and 1tbsp of oil. 


7. Add a bay leaf, cinnamon, green cardamom, black cardamom and cumin seeds. Saute well.



8. Now, add sliced onion pieces and saute them well on low medium flame until they become translucent. 


9. Now, add marinated chicken with the marinade. Mix well.


10. Put the lid and cook on low flame until water evaporates. Stir occasionally.


11. Add turmeric powder and salt. Mix well.


12. Cook it for few more minutes on low flame until oil separates from gravy.


13. Add 2 cups of water and mix well.


14. Add chicken masala and cook it on low-medium flame for 2 more minutes or until you get a desired consistency.



15. Transfer it to a plate and serve hot with rice and roti. Enjoy the spicy coriander chicken with rice or roti.

DHANIYA MUTTON (KOTHIMEERA MUTTON)



Dhaniya Mutton - is mainly prepared with Coriander (Dhaniya or Kothimeera) leaves. This is a very quick and simple Mutton Recipe. 😍 You can prepare this tasty and healthy recipe with less ingredients and quickly. 😋💜

INGREDIENTS: 

Mutton: 250gm
Coriander leaves (Dhaniya or Kothimeera): 2cups cleaned and chopped
Garlic cloves: 4-5
Cinnamon: 1/2inch piece 
Bay leaf: 1-2 
Green chilis: 6-7 
Lemon: 1
Oil: 3-4tbsp

METHOD:
  • Grind Coriander leaves and green chilis to a fine paste.


  • Clean Mutton pieces and marinate it with salt and coriander paste for 2hrs.

  • Heat oil in pressure cooker and fry garlic (lightly smashed), cinnamon and bay leaf.


  • After that add Mutton pieces and fry it for 10mins

  • After that, add sufficient water and cook it for 4 whistles.
 
  • Once the cooker is cooled down, open the lid and cook the gravy on high flame to the desired consistency. 
  • Put the flame low and add lemon juice to the curry and mix well.  
  • Serve hot with Rice.
