DAL WITH GONGURA (SORREL LEAVES)


INGREDIENTS:
Sorrel leaves bunches: 4
Dal: 150gms
Onions: 1
Green Chilis: 4
Red Chilis: 2
Mustard Seeds: 1tsp
Urad dal: 1tsp
Jeera: 1tsp
Garlic: 4cloves
Curry Leaves
Turmeric Powder
Red chili powder
Salt
Oil
METHOD:
  1. Boil sorrel leaves / gongura along with 2 green chilies, jeera and salt. and keep aside.
  2. Now, make sorrel leaves paste.
  3. Now, boil dal in pressure cooker up to 3whistles.
  4. Now, mix dal and sorrel leaves paste. Check sour taste while adding sorrel leaves paste to dal.
  5. Now, heat oil in a pan and fry mustard seeds, urad dal, red chilis, curry leaves, garlic and chopped onions.
  6. Now, add turmeric powder, red chili powder and mix well.
  7. Now, add dal mix and some water and mix well and cook for some time.
  8. Garnish with coriander leaves.
  9. Serve hot with rice.

YELLOW RICE WITH GONGURA(SORREL LEAVES)

INGREDIENTS:
Sorrel Leaves paste: 3tsp
Boiled Rice: 2cups
Mustard Seeds: 1tsp
Urad dal: 1tsp
Chana dal: 1tsp
Ground nuts: 2tbsp
Red Chilis: 3
Green Chilais: 2
Curry Leaves
Coriander Leaves
METHOD:

Sorrel Leaves Paste: 

Sorrel leaves: 3 bunches
Green Chilis: 2
Salt
Turmeric Powder
  1. Add all this in a pan and boil sorrel leaves by adding little bit water and put lid.
  2. After they get room temperature blend them to make a fine paste.
  3. You can store it for a week.  
Pulihora :
  1. Heat oil in a pan and fry mustard seeds, urad dal, green chilis, red chilis, curry leaves, ground nuts and cashew nuts.
  2. Now, add turmeric powder and mix well
  3. Now, pour this on boiled rice and mix well.
  4. Now, add Sorrel leaves(gongura) paste as needed, salt and mix well.
  5. Garnish with coriander leaves.

GONGURA (SORREL LEAVES) CHUTNEY

INGREDIENTS:
Gongura: 5bunches
Chana Dal: 1/2cup
Coriander Seeds: 2tbsp
Garlic: 4cloves
Red Chilis: 6-10
Mustard Seeds: 1tsp
Urad Dal: 1tsp
Curry Leaves
Oil
Salt

METHOD:
  1.  Clean gongura with water and let it dry.
  2. Now, fry gongura with 1tsp of oil and let it cool.
  3. Now, fry Coriander seeds, Chana dal and red Chilis separately and keep aside.
  4. Now, blend well above all fried ingredients with salt by adding water.
  5. Now, for seasoning, Heat oil in a pan and fry mustard seeds, urad dal and red chillies and curry leaves.

TIPS:  First blend coriander seeds, chana dal and red chilis.  Don't add water first. when it will make fine powder then only add remaining.

GONGURA CHICKEN (SORREL LEAVES) | గోంగూర చికెన్


Gongura Chicken is an amazing combination of Sorrel Leaves ( గోంగూర) & Chicken. It is a very special and popular recipe in Andhra Pradesh, South India. Sorrel Leaves are tastes tangy and sour. The combination of sorrel leaves and chicken will definitely crave for more. 😋😋

INGREDIENTS:

Marinated Chicken: 1kg
Green Chilis: 5-6
Onions: 1 chopped
Onion paste: 2tbsp
Ginger garlic paste: 1tsp
Everest chicken masala: 1tsp
Garam Masala: 1/2tsp
Cashewnut coconut paste: 2tbsp
Tomatoes: 1
Salt to taste
Oil: 1/4cup

For Gongura Paste: 

Sorrel Leaves (Gongura -Sour to taste): 2 bunches
Green Chilis: 5-6
Salt: 1tsp
Turmeric powder: 1/4tsp (optional)

For Chicken Marination:

Turmeric Powder: 1/2tsp
Red chili powder: 3tsp
Salt: 2tsp
Coriander (Dhaniya) Powder: 2tsp
Oil: 1tbsp


METHOD:

1.  Marinate chicken with marination ingredients and keep it in refrigerator for at least 30mins.


2.  Take a pan and add gongura (sorrel) leaves, green chilis, salt and a little water. Put the lid and cook.


3. Cook it on medium flame until leaves gets softened. Mix occasionally.


4. Let it cool and make it to a fine paste. You can grind it coarsely as per your choice.
5. Heat oil in a pan. Fry chopped onions and green Chilis. Saute them well on medium flame until onions become translucent.


6. Now, add marinated chicken and mix well. 


7. Add chopped tomatoes, ginger garlic paste & onion paste. Mix well and put the lid. Cook it on medium flame until water gets evaporated.






8. Add garam masala, chicken masala, Salt and coconut cashewnut paste. Mix well and cook it on low flame for 2 minutes.




9. Add a glass of water and mix well. Put the lid and cook it on medium high flame until chicken cooks well and gravy gets little thick.


10. Once chicken is well cooked, add ground gongura paste and mix well. If needed add some water. 


11. Cook it on low flame until the gravy gets thick. Add salt if needed.


12 Take it to a plate and serve hot with rice.
