Coriander Chicken | కొత్తిమీర చికెన్


Coriander Chicken - A simple and fragrant spicy coriander chicken or kothimeera chicken will definitely rejuvenate your tastebuds. 😍

Chicken: 500gms (Cleaned and added turmeric & salt)
Onions: 1Cup (sliced)
Green Chilis: 2-3
Bay Leaf: 1
Cinnamon: 1/2inch piece
Green Cardamom: 1
Black Cardamom: 1
Cumin Seeds: 1/4tsp
Chicken Masala: 1tsp
Ghee: 2tsp
Oil: 1tbsp
Turmeric Powder: 1/4tsp
Salt to taste

Coriander Chili Paste:

Cashew Nuts: 1/2cup
Green Chilis: 15-20
Ginger: 1 inch piece
Garlic: 20-25
Coriander Leaves: 2cups chopped
Curd: 1/4cup

METHOD:

1. In a grinding jar add Cashew nuts, green chilis, ginger and garlic. Grind coarsely.




2. Now, add chopped coriander leaves and curd.

You can also grind all masala ingredients at once to make the paste. But, if you grind all the ingredients at once, the paste won't be that smooth or you may need more time to make it smooth. So, I suggest you, first grind the hard ingredients and then adding coriander leaves, curd and some water.


3. Add a little water if needed and grind it to a smooth paste.


4. Take 500gm of cleaned chicken. Add 1/4tsp of turmeric powder and salt.


5. Add coriander chili paste to chicken and marinate it for at least 30 minutes.



6. Take a kadai and heat 2tsp of ghee and 1tbsp of oil. 


7. Add a bay leaf, cinnamon, green cardamom, black cardamom and cumin seeds. Saute well.



8. Now, add sliced onion pieces and saute them well on low medium flame until they become translucent. 


9. Now, add marinated chicken with the marinade. Mix well.


10. Put the lid and cook on low flame until water evaporates. Stir occasionally.


11. Add turmeric powder and salt. Mix well.


12. Cook it for few more minutes on low flame until oil separates from gravy.


13. Add 2 cups of water and mix well.


14. Add chicken masala and cook it on low-medium flame for 2 more minutes or until you get a desired consistency.



15. Transfer it to a plate and serve hot with rice and roti. Enjoy the spicy coriander chicken with rice or roti.

Spicy Egg Malai Curry | స్పైసీ ఎగ్ మలై కర్రీ


Egg lovers!! here is a spicy & creamy egg curry can be served with Rice or Roti. A finger licking egg curry you would definitely love it!!! 😋😍

INGREDIENTS:

Eggs: 4 Boiled
Onions: 3 Medium size
Green Chilis: 12-15
Garlic: 15-20
Ginger: 2inch piece
Cashew nuts: 1/4cup
Curd: 1/4 cup
Fresh Cream: 3 - 4tbsp
Turmeric powder: 1/4tsp
Red Chili powder: 1/2 tsp
Chicken Masala: 2tsp
Pepper Powder: 1tsp
Dry Fenugreek Leaves (kasoori Methi): 1/2tsp (optional)
Green Cardamom: 4
Black Cardamom: 1
Cinnamon: 1 inch piece
Pepper Seeds: 15-20
Oil: 3tbsp
Coriander Leaves
Salt to taste

METHOD:

1. Take a grinding jar, and add roughly chopped onions, green chilis, ginger, garlic & cashew nuts. 


2. Make a fine paste and keep aside.


3. Take a kadai and heat oil. Add turmeric powder and red chili powder.


4. Slightly mark a cut on boiled eggs and fry in the oil on low flame for 1-2 minutes.




5. In the same pan, add Pepper seeds, Cardamom, Cinnamon & grounded onion paste.


6. Mix and cook on low medium flame for 3-5minutes. Make sure to mix continuously otherwise the gravy will stick to the pan.


7. Add chicken masala, pepper powder and salt and mix well. Cook it on low flame for a minute until oil separates.



8. Add curd and mix well. Cook it for 2 more minutes.


9. Add fried eggs 


10. Add fresh cream and mix well.


11. Add 1-2 cups of water and mix well. Cook the gravy until you get desired consistency.


12. Add Dry Fenugreek leaves.


13. Garnish with coriander leaves and serve hot with Rice or Roti.

Steamed Egg Malai


Steamed Egg Malai is a healthy recipe which looks like a paneer but it's not. 😍This can be served with Rice or Roti. Try this yummy creamy Egg curry and experience the unique taste. 😋

INGREDIENTS:

For Steamed Egg:

Eggs: 4
Red Capsicum: 2tbsp chopped
Yellow Capsicum: 2tbsp chopped
Green Capsicum: 2tbsp chopped
Spring Onions: 2tbsp chopped
Coriander Leaves: 1tbsp chopped
Chili Pepper: 1tbsp chopped.
Pepper Powder: 1/2tsp
Turmeric Powder: 1/4tsp
Red Chili Powder: 1/2tsp
Oil: 1tbsp
Salt to taste

For Gravy:

Onions:2 roughly chopped and separated the layers
Cashewnuts: 25 -30 (for paste & tadka)
Fresh Coconut: 1/4 cup chopped
Green Chilis:2 (slits)
Green Chili: 1 chopped
Turmeric Powder: 1/4tsp
Red Chili Powder: 1/2tsp
Curd: 2tbsp
Cream: 2tbsp
Salt to taste

For Tadka:

Ghee: 1tbsp
Cashewnuts: 10
Red Chili powder: 1/2tsp

Method:

Preparation of Steamed Egg:

1. Take a bowl and pour eggs.


2. Add, Salt, Red chili powder and Pepper powder and mix well.


3. Add, finely chopped red, yellow and green capsicums, spring onions, chili pepper and coriander leaves. Mix well.




4. Take a bowl and apply oil with a brush.


5. Pour this egg mixture into greased bowl.


6. Take a pan and add two glasses of water and put the egg mixture bowl in it. Put the lid and steam cook until the egg mixture is finely cooked.



7. Check with the knife whether egg is cooked or not.


8. Once egg is cooked, remove the bowl from water and keep aside.


9. Once it is cooled, cut it into small pieces.
10. Take a pan and heat 1tbsp of oil.


11. Add these egg pieces one by one and sauté them well.


12. Sprinkle turmeric and red chili powder on egg pieces and mix gently. If you want spicy, add little bit more red chili powder or pepper powder.


13. Fry the egg pieces until they turn to golden brown. Take them to a plate and keep aside.

14. Now, take a pan and add onions, cashewnuts, green chili slits and a glass of water. Cook it on medium - high flame until onions get translucent. After that, bring them to room temperature and grind to make a fine paste.


15. In the same pan, heat 1tbsp of oil and add chopped green chilis. Saute them well.


16. Add already grounded onion paste and mix well. Saute them well on low-medium flame until the raw smell goes away.


17. Add Turmeric powder and mix well.


18. Add Red chili powder and mix well.


19. Add fried steam egg pieces and gently mix for a minute.


20. Add curd and mix.


21. Add a glass of water and mix well. Cook it on low flame for 5 minutes.


22. Add salt and mix well.


23. Lastly add cream and mix well. Cook it on low flame for 2 minutes.


TADKA

24. Take a tadka pan and heat Ghee. Add cashewnuts, red chili powder and saute them well.


25. Pour this tadka on Gravy and mix well.


26. Garnish with coriander leaves and serve hot with rice or roti.
