Thotakura Fry (Veg Liver)



Thotakura Fry (Veg Liver) - (తోటకూర ఫ్రై) - Thotakura / Amaranth Leaves Fry is a healthy recipe. 😋 The recipe looks like liver pieces but it is veg, made with Amaranth (Thotakura) leaves. People who don't like to eat leafy vegetables will also love to eat this. No one will be able to identify that this is made with Amaranth leaves until you reveal it.

INGREDIENTS:

To make Liver pieces:

Thotakura (Amaranth) Leaves: 1 big bunch
Green Chilis: 3 big
Turmeric Powder: 1/4tsp
Red Chili Powder: 1/2tsp
Coriander (Dhaniya) Powder: 1/4tsp
Garam Masala: 1/4tsp
Corn Flour: 2tbsp
Gram Flour (Besan): 3tbsp
Ginger Garlic Paste: 1/2tsp
Ghee for greasing
Salt to taste

To make Curry:

Onions: 2 chopped (1cup)
Oil: 2tbsp
Mustard Seeds: 1/4tsp
Urad Dal: 1/2tsp
Green Chili: 1
Curry Leaves
Tomato paste: 1/2cup
Turmeric Powder: 1/4tsp
Coriander (Dhaniya) Powder: 1/4tsp
Red Chili Powder: 1/2tsp
Ginger Garlic Paste: 1/4tsp
Salt to taste
Coriander Leaves: for Garnishing

METHOD:


1. Take a kadai and add cleaned Amaranth (Thotakura) Leaves.


2. Add green chilis, turmeric powder, Salt & some water.


3. Put the lid and cook it low-medium flame for 2 minutes. Mix Occasionally.


4. Once Amaranth leaves are cooked, drain and transfer it to a plate. Let it cool.


5. Grind it to make a fine paste and transfer the paste into a bowl



6.  Add red chili powder, coriander powder, garam masala, ginger garlic paste, salt, corn flour & besan. Mix well and make the consistency thick. If needed, you can add more besan to get the thick consistency. Adding too much of besan will make it taste like pakoda. So, add besan as per your taste.



7. Take a bowl and grease it with ghee or oil. Pour the paste in the bowl.



8. Take a kadai and fill it with some water and put the bowl. Steam cook the paste on medium flame for 5-10 mins or check until the paste is not sticking to the knife.



9. Switch off the flame and remove the steamed cake to a plate and cut it into small pieces.


10. Take a kadai and add 2tbsp of oil
11. Shallow fry the pieces for a minute and keep aside.


12. In the same oil, add mustard seeds, urad dal, green chili, curry leaves and chopped onions. Saute them well on medium flame.



13. Add, salt, turmeric powder, red chili powder, dhaniya powder & ginger garlic paste and mix well.


14. Once the onions become translucent, add tomato paste and mix well. Cook it until the oil separates.



15. Now, add fried pieces and mix well. Cook this on low - medium flame for 2 more minutes.


16. Garnish with coriander leaves and serve hot.


17. Enjoy the healthy recipe.
