Yellow Cucumber Chutney | దోసకాయ పచ్చడి


Yellow Cucumber Chutney - దోసకాయ పచ్చడి is a South Indian side dish. This traditional Andhra style chutney is most commonly served at weddings and family functions. 😍💜

Simple and easy to prepare. It is a great combination for dosa and rice. 😋💜

INGREDIENTS:

Yellow Cucumber: 2 Medium size
Green Chilis: 8-10
Garlic: 10 cloves
Ginger: 1 inch piece
Chana dal: 2tbsp
Cumin Seeds (Jeera): 1/4tsp
Oil: 2tsp
Tamarind: A small piece
Salt to taste

For Tempering:

Oil: 1tbsp
Mustard Seeds: 1/4tsp
Urad dal: 1tsp
Chana Dal: 1tsp
Red Chilis: 1-2
Curry Leaves
Asafoetida (Hing): 1/4tsp




METHOD:

1. Peel Yellow cucumber and cut them into small pieces.





2. Take a pan and heat oil. Add green chilis, garlic and ginger. Saute them well for a minute or two on low-medium flame. Once green chilis are well fried take them into a plate and let them to cool.


3. In the same pan, add chana dal and cumin seeds. Saute them well until they turn to golden brown color and keep aside.


4. In the same pan, add chopped cucumber pieces and saute them on low-medium flame until the pieces gets soft or for at least 2-3minutes.



5. Keep 2tbsp of cucumber pieces aside for later use.


6. Take the fried dal mix into a grinding jar.


7. Add small piece of tamarind.


8. Add salt as per your taste and grind coarsely.


 
9.  Grind the cucumber and dal mix to make a fine paste.



10. Add the cucumber pieces to grounded chutney.


Tempering:

11. Take a tadka pan and heat oil.
12. Add, all tadka ingredients and saute them well.


13. Now, turn off the flame and add grounded cucumber chutney. Mix well.


14. Transfer it to a serving bowl and enjoy the taste with rice or dosa.
