Palak Rasam / Spinach Rasam - is a healthy recipe can be prepared in less time. Tangy in taste as we added tamarind juice to Palak. Very simple and delicious. 😋

INGREDIENTS:
Spinach Paste: Made with cooked spinach.
Onions: 1 chopped
Tamarind: small lemon sized
Red Chili Powder: 1/4tsp
Turmeric Powder: a Pinch or two
Mustard Seeds: 1/2tsp
Urad Dal: 1tsp
Cumin Seeds: 1/4tsp
Garlic: 2-3 cloves (Optional)
Asafoetida (Hing): a Pinch (Optional)
Red Chilis: 1
Curry Leaves
Oil: 1tbsp
For Paste:
Spinach / Palak: 3 cups (Cleaned & Chopped)
Green Chilis: 4-5
Salt: 1/4tsp
Turmeric Powder: 1/4tsp

METHOD:
1. Take a pan and add chopped spinach / Palak, green chilis, turmeric powder and salt. Add little water to it.
3. Let it cool and grind it to make a fine paste. This paste can be prepared and stored in freezer for 2 weeks. With this paste, you can prepare palak paneer, palak poori, palak paratha... so many varieties in less time.
4. Take a pan and heat oil.
6. Add chopped onions and saute them until onions become translucent.
7. Add turmeric powder, red chili powder and mix well.
9. Add extracted tamarind juice of 1cup or as per the sour taste.
11. Add one glass of water and cook it on low medium flame until you get a desired consistency. You can make it as thick or thin as rasam.
Rice is the good combination to enjoy this healthy tangy spinach/palak rasam.
