Curd Rice దద్దోజనం


Curd Rice or Daddojanam is a South Indian dish and more preferrable meal during summer to keep body cool, to prevent sunstroke & beat the summer heat. Also, it is a traditional food and is offered to Hindu Gods during festivals.

INGREDIENTS:

Precooked Rice: 2 Cups (smash it lightly)
Curd: 1 full cup
Milk: 1/4cup
Urad dal: 1tsp
Mustard seeds: 1/2tsp
Pepper Seeds: 1/2tsp
Curry Leaves: 5-8leaves
Green Chilis: 2-3 chopped
Pepper Powder: 1/2tsp
Ginger: 1tsp chopped
Salt: 1/4tsp
Hing: 2Pinches
Pomegranate seeds: for garnishing
Coriander Leaves: for garnishing
Ghee: 2tbsp

METHOD:

1. Take precooked rice and smash it lightly.


2. Take a pan and heat 1 tbsp of ghee


3. Add mustard seeds, urad dal, pepper seeds, green chilis and curry leaves. Saute them well on low flame for a minute


4. Now, add hing and mix well.


5. Add, finely chopped ginger and saute well for a minute.


6. Add, cooked and smashed rice. Saute rice on low flame for a minute so that the flavor of ghee tempering will mix with rice.


7. Once rice is mixed well, turn off the stove and bring the rice to room temperature. After that add, curd and mix well.


8. Now add, milk and mix well.


9. Add salt as per the taste and mix well



10. Add Pepper Powder and mix.



11. Lastly add, the remaining ghee and mix well.



12. Garnish with pomegranate seeds and coriander leaves and serve.

Tips: 

  • Do not add curd when rice is too hot. Curd may coagulate.  
  • Always use fresh curd to get good aroma and taste.
  • Curd rice gets thick quickly. To avoid this, add milk. The consistency will be same for longer hours with the same taste when you add milk.
  • You can also add cashew nuts fried in ghee to enhance the taste.

Jeera (Cumin) Rice



Jeera rice or jeera bhaat is an Indian dish consisting of rice and cumin seeds. It is a very popular dish in the Indian subcontinent and most commonly used as an everyday rice dish.

Jeera Rice by chandfoodrecipe


INGREDIENTS:

Boiled Rice: 1 Bowl
Jeera (Cumin seeds): 2tsp
Mustard Seeds: 1tsp
Urad dal: 1tsp
Green Chilis: 3
Curry Leaves: 7-8 leaves
Oil: 2tbsp
Method:
  1. Take a pan and heat oil. 
  2. Add Mustard seeds, urad dal, green chilis, curry leaves, jeera (cumin) and saute them well.
  3. Now add, cooked rice to it and mix well.
  4. Cook rice on low flame for 5 mins.
  5. Garnish with Coriander leaves and serve hot.

YELLOW RICE WITH GONGURA(SORREL LEAVES)

INGREDIENTS:
Sorrel Leaves paste: 3tsp
Boiled Rice: 2cups
Mustard Seeds: 1tsp
Urad dal: 1tsp
Chana dal: 1tsp
Ground nuts: 2tbsp
Red Chilis: 3
Green Chilais: 2
Curry Leaves
Coriander Leaves
METHOD:

Sorrel Leaves Paste: 

Sorrel leaves: 3 bunches
Green Chilis: 2
Salt
Turmeric Powder
  1. Add all this in a pan and boil sorrel leaves by adding little bit water and put lid.
  2. After they get room temperature blend them to make a fine paste.
  3. You can store it for a week.  
Pulihora :
  1. Heat oil in a pan and fry mustard seeds, urad dal, green chilis, red chilis, curry leaves, ground nuts and cashew nuts.
  2. Now, add turmeric powder and mix well
  3. Now, pour this on boiled rice and mix well.
  4. Now, add Sorrel leaves(gongura) paste as needed, salt and mix well.
  5. Garnish with coriander leaves.

MANGO PULIHORA (Mango Rice) | మామిడికాయ పులిహోర


Mango Pulihora or Mango Rice is a traditional South Indian Recipe. This is one of the best and tasty summer food in Andhra. 😋😍

The sour taste of Mango and the aroma will definitely mesmerize you to crave for more. 😍😍

Very Simple and easy to prepare. In this summer, try this recipe and post your experience. 💜



INGREDIENTS:

Cooked Rice: 3cups
Raw Mango: 3tbsp grated (depends on sour taste)
Ground Nuts: 2tbsp (as per your choice)
Cashew Nuts: 2tbsp (as per your choice)
Green Chilis: 5-6
Red Chilis: 4
Curry Leaves
Mustard Seeds: 1/2tsp
Urad dal: 1tsp
Turmeric Powder: 1/2tsp
Hing: a Pinch
Oil: 2tbsp
Salt to taste
Coriander Leaves for garnishing


METHOD:

1. Take a pan and heat oil. Mango absorbs oil so, add oil as per the quantity.


2. Add mustard seeds, urad dal, green Chilis, red Chilis and ground nuts. Saute them well on low - medium flame until groundnuts well fried. 

Don't put the flame on high because, ground nuts will fry from outside but inside they will remain raw.


3. Add cashew nuts and curry leaves. Mix and saute them well.


4. Once Groundnuts and cashew nuts are well fried, add turmeric powder. Mix well and saute until raw smell goes away.


5. Add Hing and mix well. This gives a nice aroma to the recipe and adding this, is completely optional.


6. Add grated mango. (You can also use coarsely grinded mango). Mix and cook on low flame for 2 minutes. 


6. Add Salt as per your taste and mix well.


7. Add cooked rice and mix well.




8. Take it to a serving bowl and garnish with coriander leaves.


The taste would be so good... Enjoy your meal :)


Tip: You can fry Ground nuts and cashew nuts separately and mix them after adding the rice to get the crunchiness of these nuts.
Also, add mango as per the sourness. If your mango is less sour, you may need to add more mango.

MIRIYALA RICE

INGREDIENTS
Rice: 2 cups 
Water: 4cups 
Pepper: 2tsp 
Onions: 2 
Green Chilis: 2 
Cinnamon 
Cardamon 
Cloves 
Dalda or Oil or Ghee
Cashew nuts
Curry leaves 

METHOD

1. Take cooker pan heat dalda and fry cashew nuts and keep aside. 
2. Now, add Cinnamon, Cardamon, cloves, chopped onions, green Chilis and fry. 
3. Now, add pepper and curry leaves. 
4. Now, add water and salt to taste. 
5. After that add rice and place the lid. cook for 2-3 whistles.
