Vegetable Rice | వెజిటబుల్ రైస్


Vegetable Rice - A simple and healthy vegetable rice is prepared in an electric rice cooker. Add your favorite vegetables to prepare a quick vegetable rice for your children's lunch box or to celebrate the special days 😍😋💜


Basmati Rice: 500gms
Ghee: 2tbsp
Oil: 1tbsp
Whole Spices (Cardamom, Cloves, Cinnamon, Pepper corns, star anise, bay leaf etc)
Green Chilis: 5-6
Cashew Nuts: 1/4cup
Soya Chunks: 1/2 cup (Cleaned with Hot water)
Green Peas: 1/4cup 
French Beans: 1/4cup (chopped)
Carrots: 1/2cup (Chopped)
Potato: 1 (big) cut into medium sized pieces
Paneer: 100gm (Cut into pieces and Fried in oil)
Coconut Milk: 200gm
Ginger garlic paste: 1tsp
Onion paste: 2tsp
Cashew & Coconut paste: 1tsp
Coriander Leaves
Mint Leaves
Garam Masala: 1tsp
Salt to taste

METHOD:

1. Wash rice and keep aside for 15mins.
2. Switch on the Electric Rice Cooker and let it heat.
3. Add ghee and oil



4. Now add all the whole spices as per your choice and saute them for a minute. Here I added only few as I wanted the vegetable rice so simple and less spice. 


5. Now add Green chilis and cashew nuts. Mix and saute well


6. Add Soya chunks, green peas, French beans, carrots, potato and mix well. Saute the vegetables for a minute.


7. Add Salt as per the taste.


8. Add Onion paste, ginger garlic paste and mix well. In place of onion paste, you can also add sliced onions at step 5.



9. Now add cleaned basmati rice and mix gently. 


10. Add cashew nuts & coconut paste to the rice and mix. 


11. Add chopped coriander leaves, Mint leaves & Paneer pieces and mix well. Here I used shallow fried paneer pieces. If you want you can add paneer with out frying it.



12. Now, Add garam masala


13. Take Coconut milk and mix it with water to make 800ml of coconut milk. Here, adding coconut milk is to enhance the taste of rice and flavor. If you want you can prepare milk from a fresh coconut. And, If you don't want coconut milk you can skip it and simply add water.



14. Add sufficient water to rice. not less or not more. Usually, to cook normal rice in electric rice cooker we can take more water. For 1 cup of rice, we can add 2- 4cups based on the rice granules. But for biryani or vegetable rice the water can be taken as for 1cup of rice, 1 1/2 cup water.


15. Put the lid and cook it until the rice cooker auto turns off.


16. Transfer the rice to a plate and serve with Raita or with your favorite gravy.
