Spicy Veggi Vermicelli

Spicy veggi Vermicelli

Ingredients:
Vermicelli: 1 cup
Potato: 1
Brinjal: 1
Beetroot: small piece
Carrot
Cauliflower
Tomato
Capsicum
Green Chilies: 2-3
Groundnuts: 1tbsp
Mustard seeds: 1 tsp
Chana dal: 2tsp
Curry leaves
Coriander leaves
Turmeric
Red chili powder
Onion: 1
Oil

Method:

1. Boil vermicelli in 100ml of water.
2. Take a pan and heat 2tsp of oil. 
3. Now add mustard seeds, chana dal, ground nuts, green chilies, sliced onions, curry leaves and sauté the onions till soft.
4. Now, add small or sliced pieces of all vegetables one by one.
5. Add, salt and turmeric and fry until the vegs get soft.
6. Now, add sliced tomatoes and cook for some time.
7. Add red chili powder and cook for 5mins or till the spices get textured with vegs.
8. Now, add boiled vermicelli and mix well. Keep on mixing for 2mins in low flame.
9. Garnish with coriander leaves and serve hot with curd chutney.
