BRINJAL FRY

INGREDIENTS:
Brinjal: 1/4kg
Coriander Seeds: 2tsp
Chana Dal: 2tsp
Urad dal: 2sp
Jeera: 1tsp
Fenugreek seeds: 1/4tsp
Rice: 2tsp
Dal: 1tsp
Garlic: 6
Turmeric Powder
Red chili Powder
Salt
Oil
METHOD:
  1. Heat pan, and fry Coriander seeds, urad dal, chana dal, jeera, dal, rice, fenugreek seeds and garlic and let them cool and make fine powder.
  2. Add turmeric powder, red chilli powder and salt to the powder.
  3. Heat 2tbsp of oil in a pan and fry brinjals in low flame.
  4. When brinjals are fried then, add prepared powder and mix well .
  5. Finally garnish with coriander leaves.

TIPS:  Also U can add Ginger garlic paste and onion paste. First fry this, next add fried brinjals then add powder.
