BRINJAL KURMA

INGREDIENTS:
Small and rounded Brinjal: 250gm
Ground nuts: 50gms
Gingelly seeds: 2tsp
Coriander Seeds: 2tsp
Ginger garlic Paste: 1tsp
Onions: 100gm
Dried coconut grated :2tsp
Tamarind: little lemon size
Red chili powder
Turmeric powder
Oil: 2-3tbsp
Mustard seeds: 1/2tsp
Urad Dal: 1/2tsp
Chana Dal: 1tsp
Salt to taste

METHOD:
  1.  First, Fry Ground Nuts and Gingelly seeds separately. and blend them separately.
  2. Now, blend with coconut, ginger garlic paste, Ground nut powder, Tamarind, Salt, Turmeric powder, red chili powder, fried coriander seeds and onions.
  3. Now, cut brinjals into four parts but don't cut fully. And stuff with ground nut powder and gingelly powder.
  4. Now, Heat oil in a pan and fry mustard seeds, urad dal, chana dal, red Chilis, green Chilis, onion pieces and curry leaves.
  5.  Now, add stuffed brinjals and fry for 5mins.
  6. Now, add the blended paste and mix well.
  7. Now, add some water and cook until the gravy is thickened.
  8. Finally, garnish with Coriander leaves.

TIPS:  Don't fry Gingelly along with ground nuts.  Because, gingelly seeds turn black quickly
