GUTHI VANKAYA

INGREDIENTS: 

Small sized Brinjals: 1/4kg 
Coriander seeds: 2tsp 
Chana dal: 2tsp 
Urad dal (minapappu): 2tsp 
Jeera: 1tsp 
Fenugreek seeds: 1/4tsp 
Rice: 2tsp 
Toor dal: 1tsp 
Garlic: 6 
Turmeric 
Red chili powder 
Salt 
Oil 

METHOD:
  1. Fry coriander seeds, urad dal, chana dal, jeera, toor dal, rice, fenugreek seeds and garlic and make a fine powder.
  2. Add salt, red chili powder and turmeric to this powder.
  3. Cut Brinjals into 4 parts (Do not cut the slit till edge)
  4. Heat oil in a pan. Fry brinjals
  5. After frying brinjals, add above masala powder and mix well.
