CUCUMBER TOMATO CURRY


INGREDIENTS:
Cucumber (yellow):  2
Onions (big size): 2
Green Chilis: 2
Curry Leaves
Tomatoes: 6-7 (depends on sour taste of tomato)
Mustard Seeds: 1/2tsp
Urad dal: 1/2tsp
Coriander leaves
Oil: 2tbsp

METHOD:
  1.  Peel off cucumber and cut into small pieces. Cut onions also into small pieces.
  2. Now, heat oil in a pan and fry mustard seeds, urad dal, chili pieces and curry leaves.
  3. Now, add onions and fry till the onion pieces turn into brown.
  4. Now, add cucumber pieces and cook for some time. and add tomato pieces.
  5. Cook until the tomato pieces get soften.
  6. Now, add some water and cook until the cucumber is softened, and water is evaporated.
  7. Finally, garnish with coriander leaves.
