BRINJAL AALU MUTTER TOMATO

INGREDIENTS :

Brinjals(long): 250gms
Mutter: 1cup
Aalu: 250gms
Tomatoes: 3 (depends on sour taste of tomato)
Green Chilis: 2
Mustard Seeds: 1/4tsp
Urad Dal: 1/4tsp
Salt
Turmeric Powder
Red chili powder
coriander leaves
Curry leaves
Oil 

METHOD:
  1. Cut brinjals into long pieces. Use boiled aalu or raw.
  2. Heat 1tbsp of oil in a pan, and fry mustard seeds, Urad dal, Green Chilis and curry leaves.
  3. Now, add Mutter and fry for some time.
  4. Now, add brinjal pieces, and aalu. If you are using boiled potato, then add them after brinjal is fried well for some time. Add Turmeric Powder, red chili powder and salt and fry for some time.
  5. If you want some spicy you can add 1tsp of ginger garlic paste.
  6. When, Brinjal and potato getting soft then, add tomato pieces. 
  7. Cook until the tomato is softened. Now add, some water and cook until the water is evaporated.
  8. Finally add Coriander Powder if you desired. and mix well and cook few mins.
  9. Garnish with coriander leaves.
