Brinjal Kurma (Guthi vankaya kurma)

INGREDIENTS:

For Masla:
Ground Nuts: 2tbsp
Coconut: 1tbsp
Ginger: 1inch
Coriander Seeds: 1tsp
Seasame Seeds: 2tsp
Coriander Leaves: 6-10 Leaves
Garlic: 3-5Flakes
Cinnamon: Small Piece
Cumin Seeds: 1/4tsp
Cloves: 5

For Curry:
Brinjal: 250gms
Onions: 2 roughly chopped
Tomatoes: 2 roughly chopped
Tamarind: a small piece
Curd: 3tsp   
Green Chili Paste: 3tsp
Red Chili Powder: 1/2tsp
Turmeric Powder: 1/4tsp
Coriander Leaves: 1/4 cup chopped
Oil: 1/4 cup
Salt to taste

METHOD:
  • Cut Brinjals into + shape and do not cut till the edge. Keep the stalk as it is.
  • Take a pan and saute Ground nuts, coriander seeds until they start to change color. After that add, all the remaining masala ingredients and saute them well.
  • Saute all these ingredients on low flame. Make sure Seasame seeds shouldn't burn. Once all the ingredients saute well, flame off and let them to cool.
  • Now, grind them and make a fine powder.
  • Heat oil in the same pan. Add, Onions and saute them well until they become translucent.
  • Now add, Tomatoes & Tamarind to Onions. Stir and saute them well on medium flame for 2-3mins.
  • Once, onions & tomatoes are well fried, transfer them into a plate and let them to cool.
  • Now, grind them and make a fine paste.
  • In the same oil, saute Brinjals on low - medium flame for 5-10mins or until they become soft. You can put the lid and cook the Brinjals.
  • Once, Brinjals are well cooked, take them out and keep aside.

  • In the same pan and oil, add green chili paste and saute it well.
  • Add, Onion, tomato paste and saute it well on low flame for 5mins.
  • Now, add Turmeric powder, salt & red chili powder and mix well. 
  • Now, add grounded masala powder and mix well. Cook this on low flame as the gravy will get stick to pan very quickly.
  • When, oil separates from gravy mix, add already fried brinjals and mix well.


  • Now, add curd and mix well on low flame for 5mins.
  • Add a glass of water and mix well. Put the lid and cook the gravy on medium flame until the gravy gets thick or until the brinjals are absorbed with the gravy flavor.
  • While the gravy cooks, keep stirring in between so that the gravy won't stick to pan.
  • Once, oil separated from gravy, check brinjal is well cooked or not and and the gravy consistency.
  • Finally, add chopped coriander leaves and mix well.

  • Take it to a serving bowl and serve hot with Rice or Roti.
