INGREDIENTS:
for 2 servings
Brinjal (small and rounded - gutthi vankaya): 7
Onion paste: 2tbsp
Ginger garlic paste: 1tbsp
Red chili powder: 1tsp
Turmeric powder:1/4tsp
Salt to taste
Oil: 2-3tbsp
Coriander leaves
METHOD:
1. Cut the brinjals from bottom to top (not completely) in four slits.
2. Now, mix onion paste, ginger garlic paste, red chili powder, turmeric powder and salt.
3. Stuff this onion mixture into brinjals.
4. Now take the pan, and heat oil. Now, fry the stuffed brinjals and put the lid.
5. After some time, when the brinjals become soft then add remaining paste and cook for some more time.
6. If the brinjals are not becoming soft and getting dark then, off the flame and put the lid. It will become soft until the pan is hot. It's a small tip.
7. Garnish with coriander leaves and serve hot with rice.
