Mushroom Kaaju Curry (కాజు పుట్టగొడుగుల గ్రేవీ )

INGREDIENTS:

Button Mushrooms: 200gm (Cleaned, chopped & boiled in water along with a pinch of turmeric)
Onions: 1/2cup chopped
Tomatoes: 1/4cup chopped
Coriander Leaves: 1/4cup chopped
Turmeric Powder: 1/4tsp
Red Chili Powder: 1/4tsp
Cumin Seeds: 1/4tsp
Coconut Paste: 1tbsp
Fresh Cream: 2tbsp
Oil: 1/4cup
Salt to taste




To make PASTE:

Onion: 1 roughly chopped
Tomato: 1 roughly chopped
Green Chilis: 2
Ginger: 1inch piece
Cloves: 5-6
Cinnamon: 1inch piece
Bay Leaf:1
Cumin Seeds: 1/2tsp
Black cardamom: 1
Caraway (Shajeera) Seeds: 1/4tsp
Cashew Nuts: 1/4cup
Turmeric Powder: 1/4tsp
Red Chili Powder: 1/2tsp
Salt: 1/4tsp

For Tadka:

Butter: 1tbsp
Red Chili Powder: 1/4tsp
Cashew Nuts: 2tbsp

METHOD:

1. Clean button mushrooms and cut into pieces.
2. Boil them in water with a pinch of turmeric powder for a minute or two on high flame.
3. Take pan and heat oil.
4. Shallow fry Mushrooms for a minute on high flame and keep aside.


5. In the same pan and oil, add roughly chopped onions, tomatoes, green chilis, ginger, bay leaf, shajeera, jeera, cloves, black cardamom, cinnamom and saute them on high flame for 2-3 minutes.



6. Add turmeric powder, red chili powder and salt and mix well.


7. Add a glass of water and put the lid. Cook the onion mixture on high flame until they become translucent.


8. Take them into a plate and let them to cool. Once cooled, grind them and make a fine paste.



9. Now, take a same pan and heat oil.
10. Add, finely chopped onions and saute them well until they cooked well.


11. Add, finely chopped tomatoes and mix well. Cook them on medium-high flame until the raw smell of tomatoes goes away.


12. Once, tomatoes are well cooked, add prepared onion paste and mix well. Cook the gravy on medium flame. Stir and mix continuously.


13. After 3minutes, add mushrooms and mix well.


14. Add, Coconut paste and mix well.


15. Add. finely chopped coriander leaves and mix well. Cook the gravy until oil separates.


16. Add a half glass of water and mix well. Cook the gravy on medium flame until get the desired consistency.


17. Put the flame low and add cream. Mix well.


18. Take a tadka pan and heat butter. Add, red chili powder and cahew nuts and fry well.


19. Pour this tadka on gravy and mix well.


20. Take the gravy to a serving bowl and garnish with coriander leaves. serve hot with rice or roti.
