Andhra Chicken Fry




A Spicy Andhra Chicken Fry. Must try recipe. Spice lovers would definitely like this recipe. 😋😋

INGREDIENTS:

For Chicken MARINATION:
Chicken: 1/2kg
Ginger Garlic Paste: 1tsp
Turmeric Powder: 1/4tsp
Red Chili Powder: 1tsp
Salt to tate

For MASALA Preparation:
Coriander (Dhaniya) Seeds: 2tsp
Red Chilis: 6-7
Cumin (Jeera) Seeds: 1tsp
Cardamom: 4 small or 2big
Cinnamon: Small Piece
Cloves: 4
Bay Leaf: 2 Small or 1large
Mace (Japatri): 1


For Fry:
Onions Chopped: 1cup
Green Chilis: 4-5
Coriander Leaves: 1/4 cup
Curry Leaves: 1/2 cup
Garlic: 6-7 Crushed
Pepper Powder: 1tsp
Ginger Garlic Paste: 1tsp
Oil: 3-4tbsp

Method:

1. Take a bowl and add Chicken, turmeric powder, red chili powder, ginger garlic paste and salt. Mix very well and keep it in fridge for at least 30mins to marinate.
2. Heat a pan and add all masala ingredients and sauté them well until a nice aroma comes.
3. Once the sautéed masala is cooled down, grind them in a mixer to make a fine powder.
4. Now take a kadai and heat, 3-4tbsp of oil
5. Add onions and sauté them until they turn into golden brown.
6. Add crushed garlic and ginger garlic paste and mix well along with onions.
7. Now add marinated chicken to the onions and mix well. Cook for 10mins on medium flame and stir in between. At this point, chicken leaves water.
8. Once the water from chicken evaporates, add Green chilis (slitted) and Curry leaves and mix well. Cook it for 5mins or until the raw smell of leaves goes off.
9. Now, add half portion of the prepared masala and mix well. Cook chicken on medium flame for 5mins and stir occasionally so that chicken should not stick to the kadai or over burn.
10. Now add the remaining masala powder. Check and add salt if needed.
11. Cook Chicken on low/medium flame for 10mins and check whether chicken is well cooked or not.
12. Now add, Coriander leaves and mix well.
13. Flame off and server this spicy chicken fry with rice or roti.
